Course Content

B.A. in Hospitality Management Concentrations:

  • Asset Management

In the Asset Management concentration, students are immersed in the study of physical assets in the hospitality industry, including hotels, conference centers, resorts and other properties. This concentration also focuses on the financial implications of asset management and explores the many methods of revenue management.

  • Beverage Management

Recent years have seen an explosion of new liquor brands, micro-breweries, craft beers, wine growers and wine-producing countries. The new Beverage Management concentration addresses the need for specialized managers to manage beverage programs in restaurants, banquet operations, night clubs, hotels, casinos and cruise ships. This concentration also focuses on the marketing of beverage at the retail and wholesale level and considers the challenges of beverage manufacturing operations.

This concentration includes the possibility of a one-week excursion trip in Napa Valley, in the Bordeaux area of France and possibly in the wine growing area of Australia, or in Munich, Germany for craft brewery.

  • Hotel/Lodging Management

Hotel managers are strong leaders, with a flair for organization, communication, and most importantly working well with other people. They need to completely understand every element of an ideal guest experience, from lodging to dining to events. They must be able to solve problems and concentrate on details.

Initiative, self-discipline, effective communication skills, and the ability to organize and direct the work of others are essential. Hotel managers must be born diplomats especially when handling guest complaints.

This hospitality degree concentration takes a detailed look at these areas, as well as revenue management, sales and marketing, and more. In addition, you'll have countless opportunities to develop skills you'll need in this role, including leadership, teamwork and communication.

  • Meeting, Incentive, Convention and Exhibition (MICE)

The acronym MICE is used worldwide to refer to the business of bringing large groups together for some particular purpose. Such meetings and events usually include a well-planned agenda centered on a particular theme or topic, such as a professional trade organization, a special interest group or an educational topic.

In the U. S. alone, there are 1.8 million meetings, trade shows, conventions, congresses, and incentive events that take place across the country. All organizations, large and small, hold meetings. Thus, the skills of meeting management are relevant for all organizations, from people who informally plan meetings to professional meeting and event planners. The focus at Kendall College is to provide a project management focus to the discipline of meeting management. Relevant topics include aligning goals and objectives, evaluation, event design, food and beverage arrangements, technology and other logistics.

  • Restaurant/Food and Beverage Management

Restaurant ownership or management requires a fine balance of aesthetic and business skills. In this concentration, you'll explore applicable topics such as culinary arts, mixology, special events and fine dining.
The Restaurant/Food and Beverage Management concentration coursework centers on the profitability and development of food and beverage operations, with an understanding of food production and awareness of food quality. This concentration prepares students to run the front of the house (dining room and bar) or the entire operation (kitchen, dining room and bar).

  • Sports Management

Kendall College's Sports Management concentration will provide learning that helps prepare students for positions in sports-related fields including sports venue management, sport marketing and sports event management. Sports Management is among the fastest growing industries. The Bureau of Labor Statistics 2012 Occupational Outlook data predicts an increase of 29 percent in jobs in coaching and scouting through 2020, and a 10 percent increase in agents and managers of athletes through 2016.

The international-focused curriculum has been developed by Kendall College in partnership with the Real Madrid Graduate School, Universidad Europea. All concentration classes will be taught online by Kendall-approved faculty from the Real Madrid Graduate School. The Sports Management concentration includes the option of a one-week residency in Madrid, Spain.

  • Sustainable Management in Hospitality and Tourism

Sustainability affects multiple areas of hotels, venues, convention centers, conference centers and restaurants including engineering, food and beverage, front of house, housekeeping, operations management and other service areas. In addition, many hospitality and tourism stakeholders, including destination management organizations, restaurants, convention centers and hotels, are diligently working to present a “green” profile to attract transient business, corporate business and meetings and events. Sustainability may be a part of a larger area of responsibility or may be a separate full-time position depending on the type or size of organization. The purpose of this concentration is to enhance an applicant’s resume and provide the necessary skill set needed for success in the variety of hospitality jobs that may utilize skills developed through this concentration.

Funding

There are numerous scholarships available based on academic achievement, financial need, interests and special needs and criteria.

Kendall Presidential Scholarships*

One Presidential Scholarship valued at 50% of the cost of tuition will be awarded per term. Applicants must submit three letters of recommendation from either a professional or academic source citing the student’s abilities to succeed in his or her chosen field, a scholarship essay and official transcripts. Applicants who have been out of high school for fewer than five years must have a minimum cumulative US Equivalency GPA of 3.85. Applicants who have been out of high school more than five years must have a minimum cumulative US Equivalency GPA of 3.85 from their most recent academic level and must submit a resume. The scholarship is for the entire length of the student’s degree program, so long as the student maintains continuous, full-time enrollment remains in good academic standing. Deadline for the application is eight weeks prior to the start of the intended term.

Kendall Dean’s Scholarships*

One Dean’s Scholarship valued at 25% of the cost of tuition will be awarded per term for each of the Kendall Schools of: Business, Culinary Arts, and Hospitality Management. All applicants must submit two letters of recommendation from either a professional or academic source citing the student’s abilities to succeed in his or her chosen field, a scholarship essay and official transcripts. Applicants must have a minimum cumulative US Equivalency GPA of 3.6 from their most recent academic level and must submit a resume. The scholarship is for the entire length of the student’s degree program, so long as the student maintains continuous full-time enrollment and remains in good academic standing. Deadline for the application is eight weeks prior to the start of the intended term.

Community College Transfer

Any first-time enrolled student who has earned at least 12 completed semester hours or 18 completed quarter hours from an accredited community college (does not include developmental courses) with a minimum cumulative GPA of 2.75 is eligible for 15% off the cost of tuition. Applicants must submit official community college transcripts. The scholarship is for the entire length of the student’s degree program, so long as the student maintains continuous enrollment and remains in good academic standing.

Kendall College Trust Scholarships

The Kendall College Trust is dedicated to providing financial support for students of need enrolled in career programs at Kendall College. Scholarships are available for students in career programs who have completed their first year of study.
The Kendall College Trust is a 501(c)(3) not-for profit corporation and all donations to the Trust are tax deductible.

Alumni Legacy Scholarship

The Alumni Legacy Scholarship is a one-time award available to prospective students who are referred to Kendall College by a Kendall College graduate. This award is valued at $1,000 and will be disbursed equally over the first three quarters of the student’s enrollment at Kendall so long as the student maintains continuous enrollment and maintains good academic standing. This scholarship may be used for any of Kendall’s four programs. Scholarship submittal deadline is the same date as the intended term start application deadline.
