This unit is part of the Tourism, Travel and Hospitality Training Package. It offers students with the skills and knowledge necessary to employ personal hygiene methods to reduce pollution of food which may cause food borne illnesses. It applies to all organisations with permanent or temporary kitchen premises or bar or smaller food prep areas. It applies to both food handlers who directly handle food or food contact surfaces like cutlery, bowls and plates in their daily work activities.
